A Fajita’s More Dramatic Cousin

The molcajete is a mortar carved from volcanic rock, heated until it glows, then filled with grilled steak, chicken, chorizo and shrimp over ranchera sauce, with a slab of grilled nopal and queso fresco melting on top.

Fajitas are simpler and just as loud: meat and peppers on a cast-iron skillet straight off the fire. Build your own at the table, tortilla by tortilla.
