"The birria alone is worth the drive."
Birria is Jalisco's slow-cooked answer to a cold morning: chiles toasted and blended, beef submerged overnight, then braised until the broth turns deep red and the meat shreds by itself.
We do it the long way, every day, and never in a pressure cooker.
Quesabirria started in Jalisco and Tijuana, respectively, with taco trucks taking over Instagram during 2020. The tortillas are semi fried in a red oil mix, creating a crisp tortilla, add cheese, add birria, and suddenly we have amazing cheese pulls with juicy birria and crispy tortilla.
Twelve hours of braising, then a griddle, then cheese. Consommé on the side for dipping.
Ours are griddled to order on the plancha, never held. Consommé comes in a cup on the side because dunking is the point. Add a Cantarito for the rest of your evening.
Rich, cheesy, crisp. Cut it with a cold lager and lime, or a tamarind margarita with the chile-salt rim. Both are on happy hour.
Rich broth, bright drink. Tequila, lime, orange and grapefruit soda in a clay cup, salted rim. Or a Modelo with lime, no judgment.
